Happy Birthday!

Today is my sister-in-law's birthday -- happy birthday Becca! In honor of her special day, here's one of her favorite recipes. She's been requesting it for a while. It's delicious, easy, and did I mention a tiny bit sinful? This is the one I usually get requested to make at holiday gatherings. This and the OJ Ham, but we'll save that one for another day :)

Sweet Potato Casserole
3 c. mashed sweet potatoes (the canned ones work fine)
2 eggs
1/2 c. milk
1 tsp. cinnamon
3/4 c. sugar
1/4 c. butter, melted
1 tsp. vanilla
1/2 c. mini marshmallows
Combine all ingredients and pour into a 9x9 greased pan.
For topping:
1/2 c. flour
1 c. packed brown sugar
1 stick butter, softened
1 tsp. vanilla
1 c. chopped pecans, optional (you can toast these if you want)
Combine brown sugar, vanilla, and flour. Cut in butter to form crumbs. Stir in pecans and sprinkle over potato mixture. Top with more mini marshmallows, if desired. Bake at 350 for 30-35 min or until crumb topping is golden. Enjoy!
