(Let's Just Pretend It's) Meatless Monday =)

Here in Indiana, the weather changes on a dime. We have a saying that you never know if you'll need sunglasses, a coat, or an umbrella all on the same day. After an unseasonably warm couple of weeks, the weather has cooled quickly.


Cooler weather always makes me crave soup. They just go together so well. Here's one of my favorite soup recipes. Be warned, however, it's not for the faint of heart. A love of onion is a must! This soup goes great with homemade biscuits and a green salad.



Creamy Onion Soup


1/4 c butter
1 lb onions finely chopped (I generally use two)
1-2 garlic gloves
1/3 c flour
2 1/2 c broth or water
2 tsp parsley
1 tsp basil
2 1/2 c milk
1 carrot grated or finely chopped
salt/pepper to taste


Melt butter in pan. Add onions and garlic. Cook on low heat until tender and lightly colored. Stir in flour to form a smooth paste. Add water or broth. Bring to a boil. Add spices. Cover and simmer for about twenty minutes. Add milk and carrots and heat through. Adjust seasonings. You may garnish with shredded cheese if you like. Delicious!
