Meatless Monday: Curried Rice Pilaf

The curry powder gives the rice an unusual neon color, but it tastes wonderful! The almonds give it a nice crunch.

Curried Rice Pilaf
1/4 c butter
1 c long grain or wild rice
2 1/4 c broth or water
1 1/2 tsp curry powder
1/4 c slivered almonds
1/4 c raisins (optional)
Heat butter in pan over medium heat. Add rice cooking until rice is just brown. Add in remaining ingredients. Bring to a boil. Reduce to a simmer. Simmer covered until rice is tender and liquid is absorbed adding more liquid if neccessary.
