Quick and Easy Tater Soup

This soup is so yummy with very few ingredients! If you don't have a blender or food processor that's okay. A potato masher will work just as well to "puree" some of the veggies.

Quick and Easy Tater Soup
1 TBSP butter
1 c diced onion
1-2 cloves garlic minced
1 1/2 c potatoes diced
1/2 c carrots diced
2 c broth
1/4 tsp pepper
1 c milk
1/4 tsp cumin
1/4 tsp rosemary
1 tsp parsley
Saute onions and garlic in butter until tender. Add potatoes and carrots. Cook for about 2 more minutes. Add broth and pepper. Simmer covered for 10 minutes or until all veggies are tender. Gently stir in milk to heat through. Add parsley, cumin, and rosemary. May run part of the soup through a processor or blender or use a potato masher for a smoother consistency.
You may also make this soup in a crockpot if you choose. To do so, combine all ingredients except the milk in a crockpot on low setting. Microwave the milk to warm and stir ir just before serving.
