Wait, you didn't even notice it was gone?
I thought we were friends. I'm going to go pout now, but first I'll share the recipe.
Tex-Mex Wraps
2 c corn (frozen or fresh are best)
1 bell pepper, diced
1 can black beans, drained and rinsed
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp cilantro
1/4 tsp salt
1 c shredded cheese
6 tortillas (burrito size)
salsa and sour cream to serve
Preheat oven to 450. Gently saute corn and bell pepper in a little olive oil until tender crisp. Add beans and spices. Heat through. Remove from heat. Spoon mixture into tortillas. Top with cheese. Roll up tightly. Place seam side down on a lightly oiled baking pan. Lightly brush wraps with oil. Bake 10-12 minutes, until wraps are crisp and browned.
