Freezer Meals

I'm planning to stock up our freezer with easy meals and snacks for the days when things just don't go right or I'm too pressed for time to make a proper meal. I also need to be prepared for my trip this summer when my husband and youngest son will be one their own for 3 weeks with the cooking. And, I'm trying to come up with some ideas for a close friend who is expecting.

Hear me Lou? Clean out your freezer and think of some yummies! And you may want to warn your friends/relatives that I may be enlisting their help . . . =)

Some things I'll be making as full meals. Others I'll be freezing in individual portions using my jumbo muffin pan. This works great for soups, etc.

Here's my plan for my freezer:

Pumpkin muffins (I'll be adding a little oatmeal to make them more filling)
Pumkin oatmeal waffles
French Puffs
Biscuits

Baked Oatmeal (single serve)
Black Bean Burritos
Pizza Dough (We use Crystal's recipe)
Black Bean & Hominy Soup
Ham Pockets
Pot Pies (single serve and full size)

Cookies of various flavors (I freeze the dough to bake as needed later. This also helps me with portion control =)

I would love to do some freezer cooking, but unfortunately, I only have my top freezer in my fridge (which is tiny anyway) and that is crammed full of meat and things. One day, though! lol

Also, how much oatmeal do you sub in for your muffins? I make pumpkin muffins all the time and think adding oatmeal would be neat.

I'm just planning to add 1/2 c to 1 c of the oats to the batter. The batter is oily/thin enough I think this will work out just fine without changing the recipe. I'll let you know how it turns out.
